Ingredients: 4 medium potatoes, garlic, 8 fresh sage leaves, lemon, 4 rashers smoked streaky bacon, anchovies, olive oil, sea salt, freshly ground black pepper.
Core the potatoes using an apple corer, keep the cores to use as plugs later. Rub the potatoes with olive oil and season with sea salt.
Lay the bacon on a chopping board and place the sage, garlic and lemon on top. Roll the bacon into a tube and stuff into the potatoes.
Using the cores of the potato plug the wholes, don’t worry if some of the bacon sticks out of the sides.
Cook the potatoes for 1 hour until crisp and golden on the outside and soft and fluffy on the inside – serve!
This is a relative easy but at times fiddly dish. The bacon, anchovy, sage, garlic and lemon worked really well together but the sage was a little overpowering.
Overall a simple dish that I can definitely see me adapting with other flavours – a simple, tasty variation on the humble jacket potato.
