Ingredients: 2 large onions, 1kg potatoes, fresh thyme, celery leaves, watercress, sea salt, freshly ground black pepper, butter, olive oil.
Finely chop the onions and fry them slowly in butter, olive oil and fresh thyme.
When the onions are soft and slightly golden add the chopped potatoes and 1 pint of water. Bring to a simmer and cook until soft, stirring occasionally.
Finally stir in the chopped celery leaves and serve!
This variation on mashed potato was soft, fluffy, creamy and absolutely delicious!
The caramelised onion and sage give the potato a rich flavour and colour and the celery adds a nice crunch.
My only error with this recipe was being too cautious with the onion as they could of done with more caramelisation to give the dish that deep red/brown colour in the photo.
Overall a simple and yummy dish, one that I could see working with leeks, pancetta or bacon. Definitely a dish I’ll be doing again… why not give it a go?
